The Blessings of Age

We have learned that whiskey barrels with a mash bill similar to Woodford Reserve, tend to enhance our hybrids, Chambourcin and Vidal Blanc. “Estate Reserve Chambourcin aged in Whiskey Barrels” and “Brilliantly Lit” respectively.

For the Brilliantly Lit label, we “found” two barrels where the wine had been aging since 2021. I tasted it with trepidation expecting that the overpowering whiskey and char flavors would have clobbered the wine. To my surprise, no such thing happened.
 
It was a happy marriage as when you encounter an older human couple that have been happily married for decades and still show their spark of love to the world. This wine really does show the spark of love.
 
Our winery is a learning laboratory. We are always doing new things, trying things, learning things. We don’t use canned recipes and chemically tuned, identical batches of concentrate or juice. We start with grapes that we grow here. We adjust the winemaking to the grapes learning new things every year.
 
Our dry white wines this year are outstanding. Lorelei Riesling, Brilliantly Lit, and Estate Vignoles. I am from Missouri, the “show me” state. I will be happy to show you some dry whites that will make you proud of this state.

New Bottling

Our bottling room has been a beehive the last few weeks. Each of the following has had 25-30 cases bottled:

Blackberry 007
Just Peachy
Cranberry Bliss
Estate Vignoles (2023)
Lorelei Riesling (2023)
Brilliantly Lit (2021)

We have about a case or so of the 2022 Lorelei and Brilliantly Lit.  We are discounting these by 20% until they are sold out.
Wine Education Corner

Breathing – Did you know that wine needs to “breathe”? In general, oxygen is the enemy of wine. Once fermentation is completed, you don’t want to add any oxygen or exposure to the air for the wine. But once the bottle is opened, things change.
 
Good wines need to breathe in the glass once they are poured.  This is why you should swirl your glass in order to expose more of the wine to air. Don’t be too eager to quaff it down. Wait. Very often, a good to great wine will taste best after it has been swirled and rested several minutes.  Try it and see for yourself. Sip the glass initially without swirling. Then swirl and wait five minutes. Taste again. Your wine has “opened up.”
 
Great wines will enable you and your companions to open up too.

Dinner Under The Stars- Saturday, April 20th. Dakota Star Ranch, Checotah. Spring vegetables will be the freshest ever. The menu features vegetarian and meat entrees and a memorable meal with ranch views that can’t be beat. Locally grown and produced wine paired with locally grown meat and vegetables. Pecan Creek Mother’s Day Brunch- Sunday, May 12th, Pecan Creek Winery, Muskogee. Treat Mom to an unforgettable meal at Pecan Creek Winery! Dine in the cellar surrounded by barrels and tanks, or the Tasting Room, or outside on the patio. Enjoy our award-winning wines perfectly paired with your brunch. Relax to original jazz performed by our resident musician, Georg Haugland. Don’t forget to take some wine home. Join us from 11:30-2:00 pm! Wine Dinners and Public Tastings

We have done many wine dinners around the state of Oklahoma. We are the only winery in the state that can make four or five wine pairings from our wines that were not only “Made in Oklahoma” but grown here as well. We love to do wine dinners. Ask your favorite restaurant to give us a call at 918 683.1087 or info@pecancreekwinery.com. We do fun and sometimes educational events. Everyone has a great time.
 
We also do public tastings at liquor stores. If your favorite retail store does not carry Pecan Creek wines, just ask them. Tell them that we can do a public tasting and zero in on the labels they want to carry. Our winery customers tend to be our best promoters.  Thank you for your help.
